Spring Green Walnuts

Fresh green walnuts are used to make for walnut liquor, pickled walnuts and Greek walnut sweets. Green walnuts are approx 30-45grams in weight and 30-40mm wide. There are approximately 25-30 green walnuts per 1kg.

Green walnuts are the immature stage of a walnut. They are picked to order in late November - Mid December in a specific window of growth and development before the shell begins to harden. At this stage the developing nut can be cut through easily with a knife.  

Green walnuts need to be treated as a fruit, they can be bruised, squashed or spoil in the heat.  The natural tannins in the fruit may cause some black spotting once picked. Wearing kitchen food preparation gloves is recommended to avoid your skin being stained black whilst handling them. To maximise their freshness we aim to pick and post the same day.
